One way to get heartwood is to cut down pine trees.
In the Black Forest, which is also a dangerous part of the map, pine trees seem to grow in abundance.
You will encounter many gray dwarfs in this area. Just cut down the pine trees and collect the heartwood.
You can then create additional items, such as wooden beams, and weapons to control crowds.
